English Cheese Scoop tester. This is the main instrument of a professional cheese tester that consists of a handle made of brass and rosewood ends, a shaft and blade made of hand-forged steel. Length 18.5 cm (7.5 inch). The handle is used as a percussion hammer and the shaft used as a sampling dowel. The cheese-tester expert taps the cheese at various points while listening carefully to the way the crust takes the blows. This tells him what is going on inside in much the same way as a stethoscope does. The cheese is then pierced to extract a small sample of the contents. The resistance of the cheese indicates something of its internal consistency, and the sample enables the expert to judge the aroma and degree of maturation. |
